Cheesy Paprika Stuffed Potato (with vegan option)

A few days ago, my brother-in-law came along with my sister to have lunch with us. That being abig deal my mom asked me to make something special for him. He likes potato, cheese, paneer and anything spicy so I made this stuffed baked potato dish along with grilled paneer which I will be posting in few days
Coming back to this dish, it is cheesy paprika stuffed potato.

Cooking time: 40 min

Temperature: 200 degree/c.

Serves: 6 people

Ingredients:

6             – Potato medium size
2-3 tbsp – Broccoli small dice
2 tbsp    – Onion chop
2 tsp      – Chilly chop
1 cup     – Grated cheese (1/2 cheddar and 1/2 mozzarella or vegan cheese)
1 tbsp    – Garlic chop
1/2 tbsp – Lemon
1 tsp      – Ginger garlic powder
4 tsp      – Paprika powder
2 tbsp    – Butter (for vegan use oil instead of butter)
1 tbsp    – Olive oil
Salt and pepper to taste
Coriander for garnish

Method:

Wash the potatoes well then dry them properly. Cut them horizontally or vertically as needed. Make a cavity in the middle (I used melon scooper) keep aside the scraped out part and put it to boil.
Pre- heat the oven for 5 – 10 min at 200 degree. While oven heats, mix 1 tbsp of butter, 1 tbsp oil, 1 tsp ginger garlic powder, 1 tsp paprika powder. Coat it on potato with cavity then arrange it on baking try. Bake it for 20 min until they are almost done.
Remove the scraped out potato from boil when done. Mash the potato and add broccoli, onion, garlic, chilly, 1 tbsp butter, 3 tsp paprika powder, lemon juice, pepper and salt and mix well. Add cheddar cheese and half of mozzarella cheese mix gently again and keep it aside.
When the potatoes are done, remove them from oven and coat it again with oil-butter mixture. fill up the potato with stuffing made. Put left over mozzarella and put it in oven again for 10 min. Remove from oven, then sprinkle coriander and paprika powder as garnish. Server while hot.

Note:

 See to it that while making cavity in potato you leave at least 1-2 mm thickness at the base and on sides to hold the stuffing.
This recipe can be used by vegan too by replacing cheese to vegan cheese and not using butter in stuffing. Also only using oil for coating the potato.
Chopped up bacon can also be added in stuffing as well as Garnish.
