
At the start of the year, I went Thailand to vacation after my training was finished. Beaches and the view and those boat rides so much fun but most importantly the food. The Thai curries and their grilled food and dessert I will never forget. One dessert that stuck with me was mango sticky rice.
Before having this, I was not a huge fan of mango but this dish was so amazing I couldn’t stop eating it. The flavor of coconut combined with sweet flavor of mango.
I successfully recreated the dish try it out.
Cooking time: 40-45 minutes
Serves: 4 people
Calorie per serving: 407.38
Ingredients:
3/4 cup – Rice (I used basmati rice)
400 ml – Coconut milk
2 big – Mango (ripe and sweet)
2 tbsp – Sugar
1/2 tbsp – Lemon juice
1 drop – Food coloring (optional)
1 tbsp – oil
Moong dal or sesame seed for garnish
Method:
Wash rice properly. In a pot, pour oil and let it heat. Put rice, sugar and lemon. Stir for a minute. Pour coconut milk until it covers the rice and cook. keep on stirring continuously. As the milk boils and reduces pour more. Repeat the process until rice cooks and has a creamy texture.
Turn off the flame then put food coloring and mix properly. Cut mango in half. Garnish rice with coconut milk on top of the rice. Put moong dal or sesame seed on top of rice. Serve rice hot or cold with mango.
Note:
Adjust sweetness as per required. Moong dal is a snack of salted fried moong dal yellow in color, like shown in picture above. Pouring little by little coconut milk makes it more creamy. that gives creamy texture to rice.
