
Like i said before in one of my previous post (in paprika mango curry, if u haven’t seen it yet then check it out) I will be posting more mango based recipe
This is fried potato with bell peppers tossed in mango salsa. It’s really tasty when served hot.
Cooking time: 40-45 min.
serves: 4-6 people
Ingredients:
20 – Baby potato
1 – Bell pepper (red and green – cube)
3-4 – Garlic cloves (chop)
1 1/2 tsp – Ginger chop
2-3 tbsp – Spring onion (whole- chop)
1 tbsp – oil
1 tbsp – Coriander (chop)
5-6 tbsp – Mango salsa
1 tsp – Paprika
Oil to fry
salt to taste
Mango salsa:
2 – Mango (big)
4-5 – Red chilly
4-5 – Garlic clove
1-2 tsp – Paprika
1/2 cup – White wine
1/2 cup – Coriander
salt to taste
Method:
Put mango salsa ingredients in a mixer. Grind it little by little.Keep it aside. Wash the baby potatoes properly with water. Cut the potatoes in half. Dry them properly. Boil water and put potatoes. Let the water come to boil twice after adding potato and remove.
In a pot, heat oil. coat the potato in corn flour, paprika and salt mixture. Fry potato until its light brown and crispy on the outside and soft on inside.
In a pan heat 1 tbsp oil. Put garlic chop, ginger chop and spring onion chop. Saute it until garlic is golden brown. Add bell pepper and toss. Put mango salsa and fried potato and toss well. Sprinkle coriander and serve fresh
Note:
Do not grind the mango salsa mixture continuously. The different ingredients could change the color of salsa to reddish yellow. To keep the individual color Grind for a few seconds and stop. Repeat it until you get desired consistency.
Do not fry potato until you are going to serve it immediately. Also do not toss in salsa until you are going to serve directly as the potato will go soggy.
