
As I promised in last post (fried potato tossed in mango salsa) fried chicken drumstick with mango salsa dip. Check out this sweet spicy dish.
Cooking time: 45-50 min.
serves: 4 people
Ingredients:
8 – Chicken drumsticks
1 tbsp – Ginger Garlic Green chilly paste (GGG paste)
1 tbsp – Mustard oil
2 cup – Refined flour (maida)
1 cup – Corn flour
2 tbsp – Paprika
4 tsp – Garlic powder
oil to fry
salt and pepper to taste
Mango salsa:
2 – Mango (big)
4-5 – Red chilly
4-5 – Garlic clove
1-2 tsp – Paprika
1/2 cup – White wine
1/2 cup – Coriander
salt to taste
Method:
Put mango salsa ingredients in a mixer. Grind it little by little.Keep it aside.
Wash and clean the chicken drumsticks. Dry it with tissue paper. Make slant cuts on the drumsticks so the marination reaches inside. Marinade it with GGG paste and mustard oil for a day.
Mix refined flour, corn flour, paprika, garlic powder, salt and pepper in a blow. Put half of it in other bowl and add water. Make sure the mixture is little runny without any lumps.
In a pot heat oil. Coat the drumstick in dry mixture, then in wet mixture again in dry mixture. Put it for frying. Remove it and dab with tissue paper for removing excess oil. Put chop coriander as garnish and serve with mango salsa.
Note:
Do not grind the mango salsa mixture continuously. The different ingredients could change the color of salsa to reddish yellow. To keep the individual color Grind for a few seconds and stop. Repeat it until you get desired consistency.
See to it that while frying you put the flame on high so the coating sets and then after a minute lower the flame. The low flame makes sure the chicken cooks and the coating becomes crispy.
