Aloo Paratha

Potato is the most versatile food and anything made from it is just delicious. This is one of the most simple of potato dishes called aloo paratha. This comforting dish paired with pickle and curd is amazing to eat for breakfast lunch and dinner.

Preparation time: 40-45 min

serves: 4 people

Ingredients:

For Paratha:
400 g       – Wheat flour
1 tsp        – Salt
1 tbsp      – Oil
water as required to make a dough ( medium soft).
keep extra wheat flour for coating.

For stuffing:
1/2 kg      – Potato
1 tbsp      – Ginger Garlic Green chilly paste (GGG paste)
1 tsp        – Tu powder (Haldi)
1 tsp        – Red chilli powder (optional)
1 tbsp      – Oil
4-5           – Curry leaves
1/2 tbsp  – Dry pomegranate seeds (Or 1 tsp lemon juice)
salt to taste.

Ingredients:

First wash and boil the potatoes. While it is boiling, mix all the ingredients of paratha. Properly mix and knead a dough not too hard not too soft.
When potato is done remove and put it under cold water. Remove the skin of potato. In a bowl mash the potato. In a small pan heat oil. Put curry leaves, dry pomegranate seeds and GGG paste. Let the leaves crackle. Add this in mashed potato. Put tamarind powder, red chilli powder and salt. Mix the potatoes well.
Now, divide the dough in palm sized balls. Take one ball, coat it in wheat flour little. Flatten the dough little bit with fingers on flat circular rolling board (Chakla). Using rolling pin (belan), make a circular thick roti.

Put good spoonful potato mixture in the center and cover it with extra dough on sides. Make a ball, make a circular roti using rolling pin. Sprinkle wheat flour on both sides if u feel its sticking to the rolling pin.

Heat a pan, put the potato stuffed roti on it. Put oil or butter on both sides while cooking. Cook till golden brown. Serve with pickle and curd or ketchup.
