Idli Sambar

I love idli sambar. It is a South Indian dish. Usually eaten for breakfast. It is so healthy and delicious. This delicious dish goes with garlic chutney and coconut chutney to complete the whole dish. In my house we prefer making vegetable idli for dinner. Its perfect if you don’t want to eat something too heavy also something perfectly filling.

Ingredients:

For Idli:
350 g – Rice
150 g – Urad dal (split black dal)
2 – Onion ( chop 1)
3/4 cup – Green peas
1 – Carrot (small cube)
1/2 cup – Coriander (chop)

For Sambar:
50 g – Toor dal (split pigeon peas)
4 – Garlic (chop)
1 – Onion (big – chop)
2 – Tomato (big – chop)
1 – Vegetable drumsticks ( 2 inch strips)
1 cup – Pumpkin (golden)
5-6 – Curry leaves
1 tsp – Jeera (cumin seeds)
1 tsp – Red chilly powder
1 1/2 tsp – Sambhar masala
1/2 tsp – Turmeric powder (haldi)
Salt to taste.

Method:

For Idli:
In a bowl mix rice and urad dal. Wash well. Drain the washed water. Pour more water. Soak for 6-7 hours. Then grind it properly until thick batter like consistency. Wash one onion properly. Put it in the batter. The onion triggers fermentation. Ferment for 8-10 hours.
Put chopped onion, small cubed carrot, green peas and coriander in the batter. Mix well. Pour the batter in Idli maker and steam for 15 min.

For Sambar:
Wash toor dal properly with water. Remove the water. Do this process two times. Now put the dal in a pot or pressure cooker. Pour water (Note: the water should be double of the quantity of dal plus a little more water).
Add pumpkin (cube), onion (chopped) and drumstick (cut in 2 inch sticks) to the dal. If using a pot, let it boil till the dal cooks and the vegetable softens. If using pressure cooker, 2 whistles and lower the flame. Turn off the flame in 10 min.
In a different pot, pour oil. Add jeera and curry leaves. Let it crackle. Add garlic and onion. Saute until light golden brown. Add chopped tomato. Saute till it softens. Add dry masala (turmeric powder, sambhar masala, red chilly powder and salt). Saute for more 2 min.
Now add dal, mix well. Add little water if needed. Let it come to boil. Serve hot with idli and garlic chutney.
