Apple Pie

Hey guys!
As this is my birthday week, I will be posting few desserts. While bakery is not my area of specialization, I still enjoy trying it out. This was my first time making a pie and it turned out amazing. Since bakery is not my specialty, the recipe is not mine. I will add the link of original recipe along with the one I made which has few changes from the original recipe.

Cooking time: 50-55 min.

Serves: 8 pieces (approx)

Calorie per serving: 412.09 (approx)

Ingredients:

For crust:
2 1/2 cup – Refined flour (maida)
1/2 tsp – Salt
170 g – Unsalted butter Or low sodium butter (vegan-soya or almond milk butter)
7-8 tbsp – Ice cold water

For the filling:
5 – Apple (I used red)
1/4 cup – Caster sugar
1/2 cup – Brown sugar
1 tbsp – Cinnamon powder
1/2 tsp – Ginger powder
1/4 tsp – Nutmeg powder
1 1/2 tbsp – Lemon juice
30 g – Butter unsalted or low sodium (vegan-soya or almond milk butter)

For pie:
2-3 tbsp flour.
1 egg or 2 tbsp soya/almond milk.
1 tbsp caster sugar.

Method:

For crust:
In a bowl, sieve the flour. Add salt. Mix with spatula or fork. Cut butter in cubes. Add butter in the bowl. See to it that the butter is cold. Using fork squash butter little by little and mix with flour. Do it until the butter is small pea size.
Rub the flour – butter mixture between your hand lightly. That will mix the flour properly. Add ice cold water 1 spoon by 1 spoon. Mix well and kneed a dough. Do not make the dough too dry or too soft. Cover the dough in cling rap and put it in refrigerator for 2-3 hr.

For Filling:
In a bowl put caster sugar, brown sugar, cinnamon, nutmeg and ginger powder. Mix well. Add lemon and mix again. Peel the apple (ideally in apple pie the apple is peeled, I didn’t peel the apple). Cut them in cubes or slices. Add it in the bowl.
Add 30 g butter cut in small cube to the mixture and mix. Mix well cover and put in refrigerator for 1 hr.

For pie:
First clean the counter properly. Sprinkle flour on the counter. Place the dough on it. Rub little flour on the rolling pin. Using rolling pin, roll the dough. Roll until the dough is 2-3 mm thick.
Take the tart mold with 10 inch diameter (on the base). Put it upside down on the rolled dough lightly. Cut a circle on the dough at least 1 1/2 inch wider than the tart mold.
Lift the cut circle gently and place it on the tart mold. Press lightly to take shape of the mold. Put the filling. With extra dough cover over the filling layer. You can use strips or you can make a flat round shape to cover the entire filling area (put a cross cut in center so the air comes out).
In a small bowl beat 1 egg. Using brush, put a thin layer coat on top of the covering. Sprinkle some caster sugar on it.

For baking:
Pre-heat the oven for 10 min at 190 degree Celsius. Cover the pie loosely in silver foil. Bake for 20 min. Remove the foil and bake again for 20-30 min until the crust on top turns light shade of brown.
Serve hot with vanilla ice-cream and garnish with sprinkle of cinnamon powder.
