
This is one of my favorite dish to cook as well as eat. When I was still a trainee, Chef Narendra – the head of tandoor section made this once and it was so delicious I fell in love with it. While me being a lazy person I did not write it down thinking i will definitely remember it (I never do).
I tried this out at home and as I didn’t own grill at that time I made it in oven. This dish was the hit of the night. Try it out.
Preparation time: 15 min
Cooking time: 15-20 min
Temperature: 190 degree
Serves: 4-5 people

Ingredients:
1 cup – Cashew nut
3/4 cup – Cream
3/4 cup – Cheese (grated)
1 tbsp – Ginger Garlic Green chili paste (GGG paste)
1/4 tsp – Cardamom powder
1/2 tsp – Garam masala
1/2 tbsp – Garlic chop
2 – Broccoli (big or 4 small)
Salt to taste.
Method:
In a pot boil water. Cut the stem of broccoli. Wash it. Put it in boiling water. Cook until half done. While the broccoli is boiling, in another smaller pot boil water. Put cashew nut in it. Heat the cashews until soft. Remove from water.
Put boiled cashews, cream and cheese in a mixer. Grind it until paste like consistency. Remove it in a bowl. Mix GGG paste, garlic, garam masala, cardamom powder and salt. Mix well.
Remove the broccoli after it is half done. Dry from a tissue. Now you have 2 options. Cut the broccoli in big chunks or keep the entire broccoli as it is.
On a baking tray brush little oil. If the broccoli is cut in chunks then dip the chunks in the cashew mixture and put it on the tray.
If you are keeping whole broccoli, Pour the cashew mixture over the broccoli. Pull apart a little so the mixture reaches inside. Put it on the tray.
Pre heat the oven at 200 degree for 5 min. Put the tray in and bake for 10 min. Remove and turn the chunks. If it is whole broccoli the cashew mixture will be dripping down. Using a spoon put it back on the broccoli. Put it in the oven to bake for another 10 min.
Remove from the oven. Cut whole broccoli in half before serving. Garnish with sprinkled red chili powder and serve hot.
