Banana Leaf Pomfret

Absolute delicious fish appetizer that you people should try out. Banana leaf Pomfret is inspired by cooking style used in south of India.
A few days ago I came across this video of 2-3 men cooking a dish similar to this in bulk while explaining what they were doing. As it was in South Indian language I could not understand much but just my looking at the video I tried to recreate the dish yesterday. It was so delicious that I couldn’t wait to share it with you guys.

Preparation time: 10 min

Cooking time: 30 min

Serves: 4 people

Ingredients:

For marination:
4 – Pomfret (medium size)
2 tsp – Red chili powder
1/2 tsp – Turmeric powder (haldi)
1 1/2 tsp – Ginger Garlic Green chili paste (GGG paste)
1 tbsp – Coconut oil/Mustard oil/Vegetable oil
1/2 tbsp – Lemon juice
Salt to taste.

For masala (spice on top):
2 –  Onion (medium – fine chop)
2 – Tomato (big – fine chop)
1 tsp – Jeera (cumin seeds)
1/2 tsp – Mustard seeds (rai)
4 – Garlic clove
1 tsp – Ginger Garlic Green chili paste (GGG paste)
1 1/2 – Red chili powder
1/2 tsp – Turmeric powder (haldi)
1 tbsp – Lemon juice
Banana leaf
Salt to taste.

Method:

First clean and wash the fish properly (I cut the head off. You can keep it if you like). Make slant slits on both side of the fish. In a small bowl add all the marination ingredients. Mix them well. Apply on fish properly.
Heat a pan. Add oil on it. Put fish on it. Let it get light brown on both sides and remove it.

In a pan or pot add oil. Let it heat. Add cumin seeds, mustard seeds, garlic chopped and GGG paste. Mix well. Add onion. Let it get translucent and then add tomato. Mix occasionally. When it is about to cook, add dry spices (red chili powder, haldi and salt). Mix well and let it cook properly. Turn off the flame and add lemon juice. Mix it properly.

Take a banana leaf. Wash it properly. Spread the masala on it. Place a fish on top of the masala. Add same amount of masala on top of the fish. Seal the banana leaf.

Add little oil on pan. Let it heat. Place the fish wrapped in banana leaf on it. Cook until banana leaf becomes little soft and light brown on both sides. Serve hot.
