Baingan ka Bharta (minced eggplant sabzi)

As I have mentioned before, eggplant is not one of my favorite vegetable. Yesterday while making this I tried it (if you can’t taste your own food how do you expect others to try it and taste it – chef Siddesh) and damn it did taste good. Try it out.

Preparation time: 10 min

Cooking time: 15-20 min

Serves: 2 people

Ingredients:

1 – Eggplant (baingan – big)
1 – Onion (medium – chopped)
1 tsp – Ginger Garlic Green chili paste (GGG paste)
1 tsp – Red chili powder
1 tsp – Coriander powder
1/4 tsp – Turmeric powder (haldi)
Chopped coriander for garnish.
Salt to taste.

Method:

First put a stand on your burner. Put the eggplant on it. Put the flame on medium and let it cook.

Once the inside is cooked and soft, the outside is crisp, burnt and black remove from the flame. Let it cook. Peel of the outer layer. Roughly cut the inside part until its mashed.
In a pot/pan pour some oil. Put GGG paste. Saute. Add chopped onion. Saute. Let it cook until golden brown. Add dry masala (red chili pwd, haldi and salt). Mix well. Add mashed eggplant. Mix well. Let it cook for 2-3 min. Add chopped coriander as garnish. Serve with bajra ki bhakri or bread.
