Coleslaw Sandwich

This is one of my favorite sandwich to make. Really easy, served cold, quick to make, filling and so delicious. I make the salad part of it a little different. Try it out.

Preparation time: 20-30 min

Makes: 6-7 sandwich

Ingredient:

12-14 – slice of bread (white/brown/multigrain)

For coleslaw salad/stuffing:
1 – Carrot (Shredded)
1 – Onion (preferably while – medium sized – thin sliced)
1 – Bell pepper (green capsicum – thinly sliced)
1/2 – Cabbage (shredded)
1 1/2 tbsp – Classic mayonnaise
1 1/2 tbsp – Garlic mayonnaise
1/4 cup – Shredded cheese (processed cheese)
1/2 tsp – Apple cider vinegar (optional)
Salt and pepper to taste.

Method:

In a bowl put shredded/thinly cut vegetables. In a separate bowl add both type of mayonnaise (garlic and classic), shredded cheese, salt, pepper and apple cider vinegar. Mix well.
Add the dressing to the shredded vegetable and mix well. Take bread of choice. Cut the edges (you can keep them if you like but it is better without the edge).
Put the salad/stuffing on half of them. Rest slice used to cover the first half. Cut gently in triangles or squares and serve.
