Bhuna Chicken

This is my second favorite chicken dish to order and make in the mains categorize. A perfect bhuna chicken is little spicy, not too dry, more of minced chicken with little chunks of boneless chicken.Its so delicious, damn I love it. Its also my to go order after ordering a bunch of kebab at this place called Bade Miyan (I don’t know how many of you know this place, it’s pretty famous) with rumali roti. Try it out.

Preparation time: 10 min

Cooking time: 30-40 min

Serves: 4-5 people

Ingredients:

1/2 kg – Minced chicken
250 g – Boneless chicken (cut in cube)
1 tsp – Cumin seed (jeera)
4-5 – Garlic clove (chop)
1 tsp – Ginger Garlic Green chili paste (GGG paste)
3 – Onion (medium sized)
3 – Tomato (medium sized)
2 – Capsicum (green bell pepper – medium sized)
1 1/2 tsp – Red chili powder
1 tsp – Kashmiri red chili powder (for color, it’s not spicy)
1/2 tsp – Cumin powder (jeera powder)
3/4 tsp – Garam masala powder
1/2 tbsp – Lemon juice
2 tbsp – Curd
3-4 tbsp – Oil
Salt to taste.

Method:

Preparation:
Chop 2 medium onion and 2 medium tomato. Keep them separately. Grind 1 tomato and one onion, until its a fine paste. Clean and cut the boneless chicken in cubes. Cut capsicum in small cube

Cooking:
Take a pot. Pour 2 tbsp oil. Let it heat. Put cumin seed (jeera), GGG paste and garlic chop. When the garlic is light golden brown, add chopped onion. Saute occasionally. Cook till onion is light golden brown. Add chopped tomato. Cook until the flesh is almost melted and the tomato is cooked.

Add minced chicken and cubed boneless chicken in the pot. Bhuna means properly roasted/cooked/sauted. So now that the chicken is in the pot, add 1/2 glass water or stock. Continuously saute until half cooked and half the water is gone.

Add dry spices (red chili pwd, kashmiri red chili pwd, garam masala pwd, cumin pwd, and salt). Mix well and add 1 tbsp oil and saute. Add 2 tbsp curd and lemon juice. Saute again. Add tomato-onion paste and 1 tbsp oil on the sides. Saute continuously.
Lastly add small cubed capsicum. Mix well and turn of the flame. Garnish with chopped coriander. Serve hot with roti or bread.
