Strawberry Cake

A delicious strawberry cake infused with cranberry vodka. Great for parties. I made this cake on 31st….to be cut at midnight with champagne. It was just perfect. Try it out guys so worth it.

Preparation time: 20 min

Cooking time: 30 min

Temperature: 190 degree C

Serves: 4-6 people (half kg cake)

Ingredients:

Dry ingredients:

100 g – Refined flour (maida)
80 g – Powdered sugar
1 tsp – Baking powder

Wet ingredients:

75 g – Butter (room temperature)
2 – Eggs (large)
1/2 tsp – Vanilla essence
1/2 tsp – Strawberry essence
1/2 tsp – Raspberry essence
1/2 tsp – Blue berry essence
1/2 tbsp – Strawberry preserve (optional)

For cake and icing:

2/3 cup – Wipped cream (Tropolite – brand I used)
1 1/2 cup – Strawberry (cut)
6 – Strawberry (whole – large)
3 tbsp – Powdered sugar
30 ml – Cranberry vodka

Method:

In a dry bowl, sieve (chan na)  flour and baking powder. Mix well and keep it aside. Measure sugar separately. Keep sugar aside for later use.
In a large mixing bowl add only egg whites. Keep the egg yolk aside. Add butter. Whisk with electric mixer. Whisk until it is fluffy. Now add egg yolk, powdered sugar, essence (vanilla, strawberry, raspberry and blueberry) and strawberry preserve (optional). Whisk again until it is mixed well. The mixer should be fluffy and sugar mixed well.
Set your oven at 190 degree and pre heat for 5-10 min. Grease your cake mold with butter.
Add the flour mixer in the egg mixer little by little. mix well so there is no lumps. Put it in the cake mold. Put in the oven and bake for 30 – 35 min.
Remove from oven. Let it cool in the mold. Remove and let it cool more.

For Icing:
In a sauce pan put 1 1/2 cup strawberry cut. Add 3 tbsp sugar. Cook on low heat. Cook until the strawberry can be squashed by the back of the spoon easily. Remove from flame and let it cool.
In a big bowl pour wipping cream. Using electric mixer whisk the cream. Do it until it is in the wipped cream consistency. Add 3 – 4 tbsp strawberry sauce made above. Mix gently and put it in fridge.

For cake:
Cut a thin layer from top of the cake. Crumble it. Now cut horizontally from middle. So you have two layer. Put 30 ml of cranberry vodka using spoon on both layer. Keep aside for more 5 min so the cake sponge absorbs the liquid.
Spread the wipped cream on the cake. Put strawberry sauce on it. Put the top layer on it and cover in wipped cream on all sides. Pour strawberry sauce on top evenly. Sprinkle cake crumble on top and for finishing touch put 6 big strawberry on top..
Serve and enjoy.
